Succulent Cranberry Glazed Chicken Roast

Celebrate the holiday season with a vibrant chicken roast. This jewel-toned cranberry glaze is guaranteed to dazzle your loved ones!

Ingredients
• 1 whole chicken (±1.8–2 kg)
• 250g fresh or frozen cranberries
• 100g brown sugar
• 125ml orange juice (freshly squeezed if possible)
• 60ml soy sauce (low sodium)
• 3 garlic cloves, finely chopped
• 2 sprigs fresh thyme (or 1 teaspoon dried)
• 30ml olive oil
• Salt and black pepper to taste

Method
  1. Preheat oven to 180 °C.
  2. Prepare chicken: Pat dry with paper towel. Rub skin with olive oil, salt, and pepper. Place in a roasting dish.
  3. Make glaze: In a saucepan, combine cranberries, sugar, orange juice, soy sauce, garlic, and thyme. Simmer over medium heat for 10–12 minutes until cranberries burst and sauce thickens slightly.
  4. Roast chicken: Place chicken in oven and roast uncovered for 1 hour 45 minutes (about 25 minutes per 500 g).
  5. Glaze during roasting: After the first 45 minutes, brush chicken generously with cranberry glaze. Repeat every 20 minutes until chicken is cooked through (internal temp ±75 °C at the thickest part of thigh).
  6. Rest & serve: Remove from oven, cover loosely with foil, and rest for 10 minutes. Carve and spoon extra glaze over slices.


Serving Suggestions
  • Plate with roast vegetables (butternut, carrots, baby potatoes) for colour and balance.
  • Add a side of wild rice or couscous to soak up the glaze.
  • Garnish with fresh thyme and whole cranberries for a festive look.
